Instructions
- Cut lotus root into cubes
- Wash pork short ribs in cold water then boil in a pot. Remove the foam and drain the ribs.
- In a large soup pot, combine ribs, lotus root and ginger. Cover all the ingredients with water or about 8-10 cups.
- Bring to boil then set the heat on low. Cook for 2 hours.
- Soup is ready.
- I recommend making a simple dipping sauce with soy sauce, chili oil and sesame oil for the ribs and lotus root.
