How to blanch bok choy?
Simply add some salt to boiling water and add in bok choy. Blanch for 1 minute and remove from hot water immediately. Don’t blanch bok choy for too long because it will overcook bok choy and leave without its crunchy texture.

Bok choy is a very versatile vegetable. It is delicious by itself in a stir fry or brown sauce. It can also be added to other dishes such as tofu stir fry, Chinese veggie delight or dumpling stuffing.
What parts are edible on bok choy?
All parts of bok choy are edible such as the green part of its leaf and the white part of the leaf. The stem is slightly harder but it is also edible! Trim off the bottom part of the stem so that the vegetable is easier to chew.
How to blanch shiitake mushrooms?
Add shiitake mushrooms in boiling water. Blanch for 2 minutes. Take out. Fresh shiitake mushrooms are very easy to cook in water, don’t over cook them! The cooked mushrooms will shrink in size a little.
How to thicken the brown sauce?
In Chinese cooking, we add starch to a sauce to thicken it. We call this Gou Qian (勾芡), i.e. adding starch. You can just simply add a tbsp of cornstarch to a bowl and add 2 tbsp water and mix it up. Add this starch liquid to the sauce to thicken.
Ingredients for Bok Choy with Oyster Sauce:
Bok Choy (6-7 heads)
Shiitake mushroom(5),
green onion (1),
garlic (1clove),
oyster sauce 2 tbsp,
starch 1 tbsp
Soy sauce 1 tbsp
Chinese five spice ¼ tsp
Salt ½ tsp
Instructions for Bok Choy with Oyster Sauce
- Slice Bok Choy into half and cut Shiitake mushroom
- Chop green onion and garlic into small pieces
- Boil water, add 1tsp salt, blanch Bok Choy(cook for 1 minute), plate bok choy in a shape you like. Blanch mushroom(cook in boiling water 2 minutes) set aside
- In a pan, add oil and fry garlic, green onion until slightly brown. Add 1 cup of water to the pan. Add oyster sauce 2 tbsp, soy sauce 1 tbsp, Chinese five spice 1/4 tsp, salt 1/2 tsp add shiitake mushroom, boil for 5 minutes.
- Add starch water and stir well to thicken the sauce. Turn off fire as soon as the sauce is thickened
- Place mushroom on the plate with the bok choy, add sauce to the plate.
- Serve hot.
Bok Choy with Oyster Sauce
Ingredients
- 6-7 head bok choy
- 5 shiitake mushroom
- 1 green onion
- 1 clove garlic
- 2 tbsp oyster sauce
- 1 tbsp corn starch
- 1 tbsp Soy sauce
- 1/4 tsp Chinese five spice optional
- 1/2 tsp salt
Instructions
- Slice Bok Choy into half and cut Shiitake mushroom
- Chop green onion and garlic into small pieces
- Boil water, add 1tsp salt, blanch Bok Choy(cook for 1 minute), and plate bok choy in a shape you like. Blanch mushroom(cook in boiling water 2 minutes) set aside
- In a pan, add oil and fry garlic, green onion until slightly brown. Add 1 cup of water to the pan. Add oyster sauce 2 tbsp, soy sauce 1 tbsp, Chinese five spice 1/4 tsp, salt 1/2 tsp add shiitake mushroom, boil for 5 minutes,
- Add starch water and stir well to thicken the sauce. Turn off fire as soon as the sauce is thickened
- Place mushrooms on the plate with the bok choy, add sauce to the plate.
- Serve hot
