Lotus Root and Pork Ribs Soup

Ingredients
  

  • 1-2 lb Pork short ribs
  • 1 lb Lotus root
  • 1 piece Ginger
  • 1 tbsp salt optional

Equipment

  • 1 soup pot

Method
 

  1. Peel lotus root and cut into cubes
  2. Wash pork short ribs in cold water then boil in a pot. Remove the foam and drain the ribs.
  3. In a large soup pot, combine ribs, lotus root and ginger. Cover all the ingredients with water or about 8-10 cups.
  4. Bring to boil then set the heat on low. Cook for 2 hours.
  5. Soup is ready.
  6. I recommend making a simple dipping sauce with soy sauce, chili oil and sesame oil  for the ribs and lotus root.
