It’s been a long time since I posted a recipe and I’m so excited to share this viral Hunan dish: Hunan Stir-fried Beef. So recently a new restaurant opened in our city and it offers authentic Hunan cuisine (aka Xiang Cai) and we were so excited to try it. If you’ve ever visited China’s Hunan Province, you know the food is bold, fiery, and packed with flavor. One of the region’s most beloved dishes is Hunan Stir-Fried Beef (小炒黄牛肉), a simple yet unforgettable stir-fry that showcases tender beef, fresh chili peppers, and an irresistible smoky aroma created over high heat. We tried this dish at the restaurant and fell in love right away. It is spicy and flavorful, yet so simple with plenty of vegetables. After a few tests, I was able to recreate the dish from home and it is so good!
Unlike many American-Chinese beef dishes that rely on sweet sauces or heavy gravies, Hunan stir-fried beef is all about highlighting the natural flavor of the ingredients. The beef is sliced into strips, marinated briefly to keep it tender, then flash-cooked in a blazing hot wok with garlic, ginger, and plenty of fresh peppers. The result is a dish that’s savory, spicy, and incredibly fragrant.

What Makes It Authentic?
Authentic Hunan cuisine emphasizes freshness and heat. Instead of dried chilies, this dish traditionally uses a generous mix of fresh green and red peppers, which provide both spice and a bright, crisp flavor. A splash of light soy sauce, a touch of white pepper powder and sugar, and a little cooking wine are often all that’s needed to season the beef. To tenderize the meat, add a little baking soda stirred in water to the marinade.
Another hallmark is “wok hei” or the smoky flavor developed by cooking ingredients over extremely high heat. While it’s difficult to fully replicate at home, using a very hot wok or cast-iron skillet and cooking the beef in small batches comes surprisingly close.

Tips for Perfect Stir-Fried Beef
Slice against the grain. Thin slices cook quickly and remain tender.
Marinate briefly. For this dish, you don’t need to use corn starch to tenderize the meat. Instead stir 1/4 tsp baking soda in 1 tbsp water and mix with the beef.
Cook over high heat. The wok should be smoking before the beef goes in. But it is also totally ok to keep it medium high at home.
Add vegetables when the beef is 75% cooked. When you see the beef starts to change color, add the vegetable to allow some time to cook. This can prevent overcooking the beef.

How to Serve
Hunan stir-fried beef is traditionally served immediately with a bowl of steamed white rice. The rice balances the spicy, savory flavors and soaks up every drop of the delicious sauce. Pair it with simple vegetable dishes or a light soup for a complete Hunan-style meal.

- Slice garlic, ginger, green onion (separate white and green part)
- Slice celery into 1.5 inch slices, red chili into thin slices, and pickled pepper into small slices
- Slice beef, marinate with white pepper powder, shaoxing wine, sugar, soy sauce, baking soda stirred in water, mix well and let it set for 15 minutes
- Turn on the fire and heat up the wok. Add oil.
- Drop in red chilis stir and add garlic, ginger and green onion (white part). Stir until fragrant
- Add pickled chili and fermented black beans, stir well.
- Add beef, stir until 75% cooked, add 2 tsp of Shaoxing cooking wine via the side of the wok
- Add celery and the green part of green onion
- Add salt to taste
- When vegetables are tender, add 1 tbsp of sesame oil and cilantro, mix and serve
