If you are vegetarian or if you just want something healthy, this vegetable fried rice will be a perfect option! It is very nutritious and fiber rich, with broccoli, peas, carrots and green onion. Additionally, the two added eggs make it even more substantial.
Tips for making vegetable fried rice
- Cook veggies that require more time first, such as broccoli. I always add in broccoli right after cooking eggs to give it enough time to cook on the pan.
- Add vegetarian protein. For this rice I added two eggs for protein. Additionally you can use vegan sausage in this fried rice. Both are high in protein and can keep the rice vegetarian.
- Don’t hesitate to spice it up! If you want some additional heat, I recommend adding some hot chili peppers such as jalapeno peppers.

Green onion 1
Egg 2
Frozen peas and carrots mix ½ cup
Cooked rice 1.5 cup
Instructions
- Cut broccoli into small pieces, beat eggs and chop green onion.
- Add cooking oil on a pan, pour the beaten eggs onto the pan. When the eggs are slightly cooked, stir the egg to make it into smaller chunks.
- Add in broccoli, and frozen peas and carrots. Let cook for 3-4 minutes. Season with salt ¼ tsp.

- Add in the rice. Stir frequently to make sure rice is mixed well with other ingredients and there shouldn’t be any chunks of rice left. Season rice with salt ¼ tsp.

- Sprinkle green onion onto fried rice, mix well.

- Serve with hot sauce, pickled vegetables or by itself.
