Quick and Easy Vegetable Fried Rice

This fried rice is perfect for vegetarian! It uses broccoli, peas, carrots and eggs to create the perfect veggie fried rice. Ready in 20 minutes.

Ingredients
  

  • 1/2 head broccoli
  • 2 eggs
  • 1 green onion
  • 1/2 cup frozen peas and carrots
  • 1.5 cup cooked rice
  • 1/2 tsp salt

Equipment

  • 1 Non-stick pan

Method
 

  1. Cut broccoli into small pieces, beat eggs and chop green onion.
  2. Add cooking oil on a pan, pour the beaten eggs onto the pan. When the eggs are slightly cooked, stir the egg to make it into smaller chunks.
  3. Add in broccoli, and frozen peas and carrots. Let cook for 3-4 minutes. Season with salt ¼ tsp.
  4. Add in the rice. Stir frequently to make sure rice is mixed well with other ingredients and there shouldn’t be any chunks of rice left. Season rice with salt ¼ tsp.
  5. Sprinkle green onion onto fried rice, mix well.
  6. Serve with hot sauce, pickled vegetables or by itself.
