Have you tried century eggs before? They are also called thousand year egg! People in China has been making and eating century eggs for hundreds of years and it is really delicious if you made it right! Century eggs are preserved duck eggs. The eggs are processed with a mixture of clay, ash, salt quicklime and rice hulls and after weeks of preservation, the eggs turn into a jelly like texture with intense flavor. This recipe only requires a few ingredients and it is a classic century egg salad!
This is a nutritious and delicious starter dish in a Chinese meal and it only takes 10-15 minutes to prepare since the eggs are ready to eat when you buy from the store. Some eggs have snow flake patterns on the egg white when you open the shell, making this dish also visually pleasing to your guests!
The century egg salad is simply made with century eggs and a sauce. The sauce is very simple, typically made with garlic, cilantro, hot red chili pepper (I used cayenne, fresno chili peppers/other red hot chili works), hot green chili peppers ( I used jalapeno pepper). Mix finely chopped garlic, chili peppers with hot cooking oil to cook the garlic and chilies fragrant. Then add in other ingredients such as soy sauce, sugar, vinegar, Chili oil and sesame oil.
Slice the peeled century eggs into 1/4 slices, then move to a serving plate. Pour the sauce on each slices and then in the middle of the plate.

Method
- Peel the century egg, and cut each in half, then cut into 1/4 slices, place on a plate.
- Cut cilantro, peppers into small pieces. Mince garlic.
- Put minced garlic and chopped peppers in a bowl.
- Heat oil in a pan until almost smoking, pour on top the minced garlic and pepper and it should sizzle. Let it cool.
- Add in soy sauce, salt, sugar, vinegar, chili oil, sesame oil and cilantro in the bowl, mix well. This will be the sauce.
- Add sauce to each century egg with a spoon and then pour the rest of the sauce in the middle part of the plate.
