Typically it only takes 10-15 minutes to make this dish. If in a hurry, just scramble the eggs and then throw in the tomatoes! Season with some salt and it’s done! I often do this if I’m in a hurry. However if you want to get some extra juice out of the tomatoes and maintain the shape of scrambled eggs (they tend to shrink if cooked too long), it’s best to cook them separately and then combine. This method is used by a lot of professional chefs in China! In this post, we will use this method and add cornstarch water to thicken the sauce as well. 

How to cook eggs for tomato egg stir fry?

The eggs should be beaten before cooking. Add oil to the pan, typically around 1 tbsp for 2-3 eggs. Wait until the oil gets a bit hot to put in the eggs. The eggs should become fluffy pretty quickly. Now you can stir it a little and break the eggs into smaller pieces. Note that don’t stir too much as this may over scramble the eggs, and they will shrink in size if over scrambled. When the eggs are cooked and nicely golden, take them out immediately. 

How to cook tomatoes for tomato egg stir fry?

Cut tomatoes into chunks. They can be a little big so that later on you can find some nice pieces in the dish. Add oil to the pan, 1-2 tsp typically and add tomatoes. It can take 2-3 minutes for the tomatoes to become soft. Add a quarter cup of water so that there is more juice in the dish. When the tomatoes are kind of melting in the pan, add some cornstarch water (1 tsp cornstarch) to thicken the sauce. The sauce will become shiny and red!

How to season a Chinese tomato egg stir fry?

I’ve experimented with different seasonings and aromatics such as soy sauce, ginger and garlic. However, the best seasoning is just salt! Add salt to the eggs (¼ tsp) and later add some salt to the tomato (¼-½ tsp). This dish doesn’t really require any additional seasoning because tomatoes and eggs are both delicious and a little salt is enough to bring out the umami flavor! Top with some green onion is enough as a garnish and aromatics for the dish! 

Ingredients:

Tomato: 3 large

Egg: 3 

Green onion: 1 stalk

Salt: ½ -¾ tsp

Cornstarch: 1 tsp (add 2 tsp water to make cornstarch water)

Water: ¼ cup

Cooking Oil 

 

Instructions:

  1. Beat eggs in a bowl, season with ¼ tsp salt
  2. Cut tomatoes into chunks 
  3. In a pan, add 1 tbsp oil. Cook eggs. Gently stir to break eggs into smaller pieces. Take out and set aside 
  4. In the same pan, add 1 tsp oil, cook tomatoes for about 2-3 minutes. Add ¼ cup of water and cook for another 2-3 minutes. Add starch water to thicken the sauce and season with salt. 
  5. Add eggs back in and mix well with tomato. 
  6. Top with green onion and serve. Serve over rice if you want an easy meal!
