- Beat eggs in a bowl, season with ¼ tsp salt
- Cut tomatoes into chunks
- In a pan, add 1 tbsp oil. Cook eggs. Gently stir to break eggs into smaller pieces. Take out and set aside
- In the same pan, add 1 tsp oil, cook tomatoes for about 2-3 minutes. Add ¼ cup of water and cook for another 2-3 minutes. Add starch water to thicken the sauce and season with salt.
- Add eggs back in and mix well with tomato.
- Top with green onion and serve. Serve over rice if you want an easy meal!
