Chinese Tomato Egg Recipe

This recipe is used by lots of Chinese chefs. The best way to make juicy Chinese tomato and egg. Can be served over rice.

Ingredients
  

  • 3 large Tomato
  • 3 Egg
  • 1 stalk Green onion
  • 1/2-3/4 tsp Salt or to taste
  • 1 tsp Cornstarch add 2 tsp water to make cornstarch water
  • 1/4 cup Water
  • Cooking Oil

Equipment

  • 1 Non-stick pan

Method
 

  1. Beat eggs in a bowl, season with ¼ tsp salt
  2. Cut tomatoes into chunks
  3. In a pan, add 1 tbsp oil. Cook eggs. Gently stir to break eggs into smaller pieces. Take out and set aside
  4. In the same pan, add 1 tsp oil, cook tomatoes for about 2-3 minutes. Add ¼ cup of water and cook for another 2-3 minutes. Add starch water to thicken the sauce and season with salt.
  5. Add eggs back in and mix well with tomato.
  6. Top with green onion and serve. Serve over rice if you want an easy meal!
