Stir-fried oyster mushrooms with eggs is one of my favorite ways to eat oyster mushrooms. Since oyster mushrooms are naturally meaty and chewy, they are a perfect pair with eggs. This dish is also super simple to make and ready in 10 minutes! Eggs also add lots of protein to this dish, making it a very substantial dish for lunch or dinner! 

How long should oyster mushrooms be cooked? 

Oyster mushrooms should be cooked for about 5-8 minutes on a pan. The mushrooms will become tender when cooked so it’s very easy to tell just by observing the tenderness of the mushrooms. 

How do you cut and cook oyster mushrooms?

You don’t need to cut oyster mushrooms. Simply split them into bite sizes and they are ready to be cooked! Oyster mushrooms can be cooked on a pan for 5-8 minutes or blanched in water for 1-2 minutes. 

Do you eat the stems of oyster mushrooms? 

Yes! The stem of oyster mushrooms is perfectly edible! They can be sometimes a little more chewy than other parts. 

Ingredients:

Eggs 4

Oyster mushrooms 0.5 lb

Green onion 2 talks

Carrot 1 

Salt 1/2 tsp

Cooking oil 1 tbsp

Instructions:

  1. Clean oyster mushrooms with a paper towel and split them into smaller pieces. 
  2. Beat 4 eggs in a bowl. 
  3. Slice 1 carrot and some green onion. 
  4. In a pan, add cooking oil on medium heat. 
  5. Fry eggs and separate into smaller pieces. Add carrots and oyster mushrooms. 
  6. Stir fry until oyster mushrooms are tender (3-4 minutes). Season with walt. 
  7. Top with green onions and serve.
