Pork stir fry with green chili peppers is a traditional Sichuan dish! With the abundance of chili peppers in the summertime, this dish brings explosive freshness to your palate! The pork is cut into strips traditionally as well as the chili peppers. Garlic and ginger are required as seasoning! Overall it is one of the easiest stir fry dishes you can create at home!

What kind of chili peppers to use? 

There is no specific requirement for chili peppers. Traditionally a long and mildly spicy chili pepper called “er jing tiao” (二荆条) is used. You can use any mildly spicy pepper such as poblano and anaheim. I would not recommend using jalapeno pepper as they are too spicy. Additionally if you don’t want any heat from the chili, just use bell pepper and it would work just fine! 

What kind of pork to use for stir fry? 

I would highly recommend using pork tenderloin to make this dish. Pork tenderloin is a low fat cut with very tender meat. After frying in oil, pork tenderloin will stay tender and tasty! 

How long does it take to make pork stir fry? 

This is a very easy dish that needs minimum preparation! Typically 20 minutes is enough to make it! Additionally if you can buy shredded pork at Asian grocery store, it will save you even more time! 

How to you make stir fry pork tender?

The key is to marinate the pork with corn starch and a little water. The coated corn starch helps keep pork tender when frying. Additionally, washing pork strips in water before marinating is a great way to add additional moisture to the pork.

Ingredients:

Hot Green Chili Pepper 8-10

Pork Tenderloin 300g

Ginger 1 piece

Garlic 4-5 cloves

Marinate pork with: 

salt (1/4 tsp)

sugar (1/4 tsp)

starch (1 tbsp)

soy sauce (1 tsp)

Water 1 tbsp

oil (1 tbsp)

Season stir fry with:

salt(1/4 tsp)

1 pinch of sugar

soy sauce (1 tsp)

Instructions 

  1. Cut green pepper into strips, slice ginger and garlic
  2. Cut pork tenderloin into strips, wash in water, marinate with salt (1/4 tsp), sugar (1/4 tsp), starch (1 tbsp), soy sauce (1 tsp), Water 1 tbsp, oil (1 tbsp)
  3.  Heat up a wok/pan, add oil (1/4 cup), cook pork strips, add in ginger and garlic, then add in pepper.
  4. Add salt(1/4 tsp), 1 pinch of sugar, soy sauce (1 tsp)

  • 8-10 long horn peppers other green peppers are ok too
  • 300 g pork tenderloin
  • 1 piece ginger
  • 4-5 garlic

Pork Marinate

  • 1/4 tsp salt
  • 1/4 tsp sugar
  • 1 tbsp starch
  • 1 tsp soy sauce
  • 1 tbsp water
  • 1 tbsp oil

Stir fry seasoning

  • 1/4 tsp salt
  • 1 pinch sugar
  • 1 tsp soy sauce

Instructions

  • Cut green pepper into strips, slice ginger and garlic
  • Cut pork tenderloin into strips, wash in water, marinate with salt, sugar, starch, soy sauce, water, oil
  • Heat up a wok/pan, add oil (1/4 cup), cook pork strips, add in ginger and garlic, then add in pepper.
  • Add salt(1/4 tsp), 1 pinch of sugar, soy sauce (1 tsp) to season the stir fry.
  • Serve
