Chinese Street Food | Chengdu Spicy Golden Baby Potatoes 四川小吃小土豆

Walking down the streets of Sichuan, you’ll see street vendors selling chopped potatoes cooked in chili oil. It is one of my favorite street food growing up! I used to buy it after school with my friends haha! The potatoes are first cooked in boiling water and right after they are fully cooked, they are drained and then fried again in a pan. They are seasoned with salt, Sichuan chili powder and cumin. Later topped with green onion and cilantro for the extra fresh aroma. 

How long to cook potatoes? 

Depending on the size of your potatoes, cooking them should take 5-10 minutes. Make sure to give it a try before draining the potatoes as uncooked potatoes can cause food poisoning. Do not over cook the potatoes because you want to maintain the texture before frying them! 

Can I season it with other ingredients?

Yes! Other than the basic ingredients, you can add garlic, Lao Gan Ma chili oil, sugar, MSG for additional taste. It’s really a flexible side dish! 

What if I can’t eat spicy food?

It is not a problem to make it not spicy! Substitute the chili powder with white pepper and it still tastes amazing!!! 

Ingredients: Small potatoes: 1 bag/ 1 lb Cooking oil: 2 tbsp Salt: 1 tea spoon, Ground Chilli Pepper: 1/2 tsp, Ground Cumin: 1/2 tsp, Ground White Pepper: 1/2 tsp, Vegetable oil: 2 tbsp, Cilantro, Green Onion

Instructions:

  1. Cut larger potatoes in half if needed. 
  2. Bring a pot of water to boil, cook potatoes for 5-10 minutes until fully cooked and drain. 
  3. Chop green onion and cilantro. 
  4. In a frying pan, add cooking oil, put in potatoes. Season with chili pepper, ground cumin and salt. Fry for 4-5 minutes until you can see crispy skin. 
  5. Add in green onion and cilantro. Stir well. 
  6. Top with chili oil and serve.

  • 1 tsp chili oil optional
