Shrimp and Egg Fried Rice

Ingredients
  

  • 8 Shrimp or prawn
  • 1 egg
  • 1 clove garlic
  • 1/2 onion
  • 1/4 cup frozen peas and carrots
  • 1 green onion
  • 1.5 cup cooked rice
  • 1/2 tsp salt

Equipment

  • 1 Pan

Method
 

  1. Defrost shrimp/prawn, beat egg, finely chop onion and green onion. Mince garlic.
  2. Add some cooking oil to a hot pan/wok. Add in chopped onion and minced garlic, cook until onion is slightly brown.
  3. Add in frozen peas and carrots, stir fry until thoroughly cooked.
  4. Move everything to one side of the pan.
  5. Add in shrimp. Stir well. Sprinkle ¼ tsp salt on the ingredients. Add in 1 beaten egg. Stir fry.
  6. Add in rice and mix with ingredients well. Sprinkle ¼ tsp salt.
  7. Top with green onion, mix well and serve.
